I’m Back!

Hi Everyone!

It’s been ages!

I’ve had a pretty eventful year since my last post: moving cities – not having a kitchen – eating cafeteria food – and finishing school XD

But, I’ve been on a bit of a break now and I would love to share my culinary journeys since with you 🙂

I enjoy cooking so, although I may not post in a while, please rest assured that the stove is still hot and fired up!

  • rosemary & olive oil flavoured-naan pan-fried in olive oil margarine topped with baby spinach, slices of smoked black forest ham, and sunny-side eggs seasoned with salt, thyme, and black pepper
  • blueberry maple and 0% fat plain yogurt mixed with “Go-Lean” granola cereal
  • pear herbal tea laced with honey

  • simply delicious!
  • the eggs were microwaved for a bit to get them evenly cooked without my having to flip them on the pan and risk ruining their pretty shape – sneaky, huh 😉

a peculiar curry ~ pan-fried naan

  • curry made from chicken drumsticks, chicken broth, almonds, red kidney beans, peas, diced potatoes, coconut & almond milk, oat bran, wheat flour (for thickening), baby spinach, chives, parsley, curry spice, and salt
  • rosemary & olive oil flavoured-naan pan-fried in olive oil margarine
  • apple cinnamon tea laced with milk and honey

  • ground beef seasoned with garlic salt, ginger, parsley and black pepper, stuffed with medium-cheddar, coated with egg, and baked 
  • chopped sweet potatoes and carrots, and sweet corn boiled in almond milk, olive oil margarine, and oat bran – baked in the oven
  • a smoothie made from coconut & almond milk, celery, frozen mangoes, cranberries, raspberries, blueberries, strawberries, black berries, and ice

coconut & lime-flavoured brown rice ~ tofu-egg ~ salad

  • brown rice boiled with coconut & almond milk, lime juice, garlic salt, and black pepper – topped with parsley
  • tofu-egg – blended tofu mixed with egg, sesame oil, salt, chives, green onion, and black pepper and cooked in a pot – inspired by a friend’s recipe 
  • refer to the “Jamaican-inspired fillet ~ homemade ‘flat’ bread ~ an unconventional salad” post for the ingredient list and recipe snapshots for the salad – this time, I used chopped bell peppers and no sausage or egg

  • I’ll try steaming the tofu-egg next time to retain its fluffiness
  • I’ll also add more milk to make the rice richer

  • pancakes made with a traditional mix, blended nuts, raisins, brown sugar, milk, wheat flour, egg, water, olive oil margarine, and honey – drizzled with maple syrup
  • baked beans topped with parsley
  • chopped chicken sausage stirred in tomato sauce, black pepper, and salt – topped parsley
  • a smoothie made from baby spinach, celery, frozen mangoes, cranberries, raspberries, blueberries, strawberries, black berries, clementines, lime juice, mixed nuts, ice, veggie-fruit and cranberry juice

baked curry chicken ~ sweet yams & soy sauce ~ veggie & tomato soup

  • soft chicken thighs and drumsticks boiled with turmeric, black pepper, salt, curry seasoning, chopped spinach, wheat flour (for thickening) parsley, and chives – boiled on the stove and baked in the oven 
  • sweet yams (or potatoes, whichever you want to call it) boiled with salt and olive oil – topped with some soy sauce
  • chopped, steam broccoli, mushrooms, carrots, peas, celery, and green beans boiled with tomato sauce, salt, black pepper, thyme, basil, and chicken broth
  • some more guava juice
